So, how does milk become Kefir? The fermentation is triggered by Kefir “grains,” consisting of various species of symbiotic bacteria and yeast. Bacteria (mostly lactobacteria and streptococci) ferment lactose, the sugar found in milk; yeasts perform alcohol fermentation, producing negligible amounts of alcohol.
